  Pepino Melon and Tomato Salad

Ingredients:
1/2 Pepino melon, cut into 1-inch cubes
1 lb tomato, cut into 1-inch cubes
3/4 cup fresh mint, chopped
2 1/2 tbsp olive oil
1 tbsp balsamic vinegar
salt and pepper to taste
Instructions:
Combine pepino melon, tomatoes and mint into a bowl. Season with salt and pepper.

Drizzle with olive oil and balsamic vinegar.

Serves 4
