Ingredients:
1 1/2 cups flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/4 cup butter, softened
5 to 6 tbsp milk
1 tsp grated lemon zest
1/2 tsp lemon extract
1 cup heavy cream
2 tbsp sugar
3 tbsp melted raspberry jam
1 tbsp cherry brandy
2 cups pitted Bing cherries
Instructions:
1. Preheat oven to 425F and line a baking sheet with parchment paper.

2. Stir together dry ingredients in a medium bowl. Cut in butter with a pastry blender or fork until mixture resembles coarse crumbs. Stir in milk, lemon zest and extract.

3. Knead several times on a lightly floured board and roll out 3/4-inch thick. Cut into 4 circles with a 3-inch round cutter.

4. Place on prepared baking sheet and bake for 10 to 12 minutes or until lightly browned; let cool completely.

5. Meanwhile, beat cream and sugar together until soft peaks form. Melt jam and kirsch together in a small saucepan. Split each shortcake in half lengthwise and spoon whipped cream, cherries and melted jam between the layers.
