Ingredients:
1/2 casaba melon, cut into 1 inch cubes
1 cucumber
2 tbsp fresh chopped basil
2 tbsp lemon juice
2 tbsp champagne (or white wine) vinegar
Grated zest of one lemon
2 tbsp olive oil
Freshly ground black pepper
1/4 cup crumbled feta cheese
Instructions:
Place the casaba melon in a salad bowl. Peel the cucumber, cut it in half and scoop out the seeds with a melon scoop or a spoon. Slice the cucumber thinly and add it to the melon, along with the basil.

In a small bowl, combine the lemon juice, vinegar and lemon zest. Whisk in the olive oil in a slow drizzle. Add pepper, about 8 twists of the pepper mill, and stir. Pour the dressing over the salad and mix well.

Serve the salad on plates or in bowls, sprinkle each serving with a spoonful of feta cheese.

Serves 4.
