Also called coriander (which actually refers to the seeds), cilantro has a strong, sage-citrus flavor that many find irresistible. Use with squash, eggplant, snow peas and onion. Used often in guacamole, chili, salsa and cold seafood salads. Also used in Indian, Chinese and Thai cooking. In general, herbs should be fresh looking, crisp and brightly-colored. Avoid herbs that are wilted, have dry brown areas, or are pale or yellow in color. Slimy looking dark spots with small areas of mold indicate old product or poor handling.
