Good-quality pumpkin squash will be firm and heavy for its size. The coloring will be orange, although white varieties are available.

Avoid product that has soft spots or is extremely light for its size. Avoid cut pieces if the meat is soft or dry.

Pumpkin is the vegetable responsible for preventing the starvation of the pilgrims during their first winter in America.
