May 15 - Bitter Melon Tips:
Used similar to squash - bitter melon can be stuffed, curried or pickled.
Good-quality bitter melon should be firm, wrinkled and light-green but turning
yellow in color. They will turn orange when very ripe. The skin is edible,
but the seeds should be removed. Soak in salt water to remove any bitterness.
Avoid product that is soft, completely orange in color or has spots of mold.
