March 12 - Artichoke Selection Tips:
(Increased availability means good prices on artichokes recently
- so this week's tips & trivia are all about the glorious globe!)
To pick a perfect artichoke, you must look for different things at different
times of the season. During the winter, artichokes should be heavy, compact
and may have some white or bronze colored blistering caused by frost. Light
freezing does not hurt artichokes. (Many feel this is when they are at their
peak in flavor).
In the spring, artichokes should be more rounded, heavy, deep green in color and have tight leaves.
In the summer and fall, artichokes should be more cone-shaped, lighter colored, less heavy and the leaves will be spiny and not as tight.
