Produce OASIS Tip of the Day
February 5 - How to Juice, Squeeze and Ream a Lemon
If you just need a squeeze, then slicing off a wedge of lemon is the way to go. (Wrap what remains in plastic wrap and it should
last 4 or 5 days in the refrigerator.) se lemon juice on apples and avocados to prevent browning after they are sliced.
If you need the juice from a whole lemon, there are a few tips and tricks:
- To get the most juice from a lemon, first bring the fruit to room temperature and roll on a hard surface while pressing down on the lemon - or - Microwave for 30 seconds to increase juice content.
- Rolling the lemon on the countertop (before you slice it) helps to break down some of the fibers and the juice will flow more freely when you cut it.
- Choose a method to extract the lemon's juice:
- Cut the lemon in half, and then cup one hand under the lemon as they squeeze the lemon with their other hand. Use the cupped hand to catch the seeds.
- Use a juicer. Cut the lemon in half and press it down on the raised bit. The juice collects in the base. Juicers may be purchased for as little as $5.
- Use a reamer. Cut the lemon in half and press the reamer into the cut side. Then twist and press the reamer at the same time.
- Pour the juice through a strainer to capture the seeds.
OASIS has much more information on citrus.
