April 17 - Chicory Tips:
Used in salads or cooked like spinach or greens, good-quality chicory
will have inner leaves that are crisp and pale green in color. There are
a number of varieties of chicory including heading and loose-leaf. Avoid
product that has wilted, brown-edged or discolored leaves.
Chicory is available year-round - depending on the variety.
