URUGUAY Meat Balls-ALBONDIGAS: 6 servings.2 pounds ground beef1/2 cup chopped raisins1/4 cup chopped olives1 teaspoon sugarFreshly ground black pepper1 teaspoon salt2 eggs, beaten1 cup fine breadcrumbs6 tablespoons butter1 onion, chopped1 clove garlic, crushed2 tomatoes, peeled, seeded and chopped1 tablespoon finely chopped parsley1/2 cup beef broth
Combine the beef, raisins and olives. Season with the sugar, salt and pepper and mix well. Form into small balls and coat with egg and breadcrumbs. Heat the butter in a frying pan, add the onion and garlic and cook for 5 minutes. Add the meat balls and fry 15 minutes until brown and cooked. Add the tomatoes and simmer for 5 minutes. Remove the meat balls and keep them warm. Add the parsley and beef broth and simmer for 5 minutes. Pour the sauce over the meat balls and serve.
Make washing spinach easy by adding a small amount of salt to cold water. Swish around, transfer to colander, rinse and drain immediately, pat dry.
