1-1/2 sticks butter 1/4 cup (60 ml) vinegar crushed red pepper, to taste cayenne pepper, to taste 1 chicken
Melt everything together - DO NOT BOIL. Cook chicken on grill or in oven. When done pull off skin and remove from bone. Chop up like you would pork BBQ. Mix everything together.
Used as you would cooked spinach, good-quality collards will have dark-green colored, broad, flat leaves that are crisp, upright and not wilted.
