1 mango, sliced1 Santa Claus melon, sliced and dicedZest and juice of 1 lemon1/4 cup olive oil1/4 cup fresh mint, chopped1 cup mild or medium cheddar cheese, cut in small sticks4 cups field salad8 prosciutto slicesSalt and pepper
Prepare a medium-intensity charcoal fire or set gas BBQ at medium.In a bowl, whip the lemon zest and juice with the oil and mint. Mix together with the mango and melon.Grill the fruit on the BBQ to char them well. Set aside.Before serving, put the fruit on four plates. Top with cheese, the field salad and the prosciutto slices. Pour a dash of olive oil. Add salt and pepper.
