Crenshaw Melon and Cucumber Salad

Ingredients:

2 cups Crenshaw Melon cut into 1 inch cube s
1 tsp Ginger Root minced
2 tsp tamari or soy sauce
1 1/2 tsp Sugar
1 tsp Asian sesame oil - toasted
1/4 tsp pepper flakes dried
1/4 cup Vegetable Oil
2 cups seedless cucumber halved
2 Scallions minced
1 tbsp Sesame Seeds lightly toasted

Instructions:

In a bowl whisk together the vinegar, ginger root, tamari or soy sauce, sugar, sesame oil, red pepper flakes, and the vegetable oil until well combined. Add the cucumber, the melon, and the scallions. Toss the salad until it is combined well, and sprinkle it with the sesame seeds.

Serves 4
