8 oz. coconut milk 1 lime, zest and juice of, finely grated 4 cup Casaba melon, cubed1/4 cup Shredded coconut, toastedAdditional lime zest (to garnish) (optional)
1. Mix together the coconut milk, lime juice, and zest in a large bowl until well mixed.2. Add the melon and toss well.3. Chill for at least one hour, and up to three hours.4. Garnish with the toasted coconut and lime zest and serve chilled.
Grapefruit keeps at room temperature for at least a week. For longer storage, refrigerate in a plastic bag or in the covered vegetable crisper.
