2 Cups peeled cucumber-diced2 Cups fresh ripe tomato-diced2 Cups fresh red bell pepper-diced1/2 Cup red onion-diced2 Cups tomato juice1/2 Cup red wine vinegar1/3 Cup extra virgin olive oil2 dashes Tabasco Sauce2 cloves garlic-crushed (optional)Salt and Pepper to taste
Combine cucumber, tomato, red bell pepper onion and garlic in large bowl. Mix together and put about a third of it into a blender/food processor. Blend together for about 5-10 seconds (until it resembles salsa) and put it back in the bowl. Mix in tomato juice, vinegar, olive oil, and Tabasco sauce until well blended. Refrigerate for about 6 hours before serving. Serve cold. Salt and pepper to taste.
Make washing spinach easy by adding a small amount of salt to cold water. Swish around, transfer to colander, rinse and drain immediately, pat dry.
