Ingredients:

2 Cups peeled cucumber-diced
2 Cups fresh ripe tomato-diced
2 Cups fresh red bell pepper-diced
1/2 Cup red onion-diced
2 Cups tomato juice
1/2 Cup red wine vinegar
1/3 Cup extra virgin olive oil
2 dashes Tabasco Sauce
2 cloves garlic-crushed (optional)
Salt and Pepper to taste

Instructions:

Combine cucumber, tomato, red bell pepper onion and garlic in large bowl. Mix together and put about a third of it into a blender/food processor. Blend together for about 5-10 seconds (until it resembles salsa) and put it back in the bowl. Mix in tomato juice, vinegar, olive oil, and Tabasco sauce until well blended. Refrigerate for about 6 hours before serving. Serve cold. Salt and pepper to taste.
