2 envelopes unflavored gelatin1 cup boiling water1/4 cup lemon juice1 8 oz. cream cheese, softened1 cup pineapple, crushed1/2 cup chopped walnuts1 250 ml NESTLÉ All Purpose Creamdessicated coconut, toasted
1. Combine gelatin, hot water, lemon juice and cream cheese in pan and stir over low heat until cheese is blended well into the mixture.2. Remove from heat; add crushed pineapple and walnuts. Let cool and stir in the NESTLÉ All-Purpose Cream.3. Stuff into cucumber boats and tomato cups.4. Sprinkle with toasted coconut before serving.
To crack coconuts, pierce one or two of the eyes and drain the milk.
Place in the freezer for an hour, or in a 350°F. oven for 20-30 minutes. (...)
