1 whole chicken, cut into serving portions
1-1/2 tbsp. curry powder
3 tbsp. cooking oil
4 cloves garlic, minced
1 medium onion, sliced
4 small tomatoes, sliced
2 MAGGI Chicken Broth Cube
3 cups coconut milk
3 medium potatoes, peeled and quartered


1. Marinate chicken in curry powder for about 10 min.

2. Heat oil and saute garlic, onions and tomatoes. Add MAGGI CUBES and marinated chicken. Cook until chicken turns slightly brown.

3. Pour coconut milk and simmer until chicken is tender. Add potatoes and continue cooking until fork-tender.

Serve hot with rice and a choice of condiments like chutney, mashed boiled egg, fried saba bananas and raisins.
