ROASTED BANANA ICE CREAM MAKES 1 QUART 2 Tablespoons vegetable oil4 ripe bananas, unpeeled6 egg yolks1 1/3 cups sugar2 cups milk2 cups heavy cream2 Tablespoons dark rum
1. -- Preheat oven to 350° F.2. -- Lightly oil bananas and place on a baking sheet. Bake for 10 –15, or until they are dark and soft.3.-- Remove the bananas from the oven and peel. Puree in a food processor and set aside.4. -- In a large stainless steel bowl, whisk together the egg yolks and sugar until light and foamy.5. -- In a large saucepan set over medium heat, combine the milk and cream. Bring to a boil.6. -- Remove from heat and slowly pour into the yolk mixture, whisking rapidly. Add the banana puree and rum.7. -- Strain and cool. Freeze according to the manufacturer’s instructions.
