1 lb. sour apples3 C. water3/4 C. sugar1/2 grated lemon rind1 T. gelatin1 C. cream
Cook apples in water with lemon rind. Strain, add sugar and dissolved gelatin. When cool add whipped cream. Pour into mold and chill.
Rub cut apples with lemon juice to keep slices and wedges creamy white for hours.
