Duck1 onion, sliced1/2 cup butter or drippingsSalt and pepper1 cup fresh mushrooms - sliced2 cups water1 bay leaf2 tablespoons flour 1/8 teaspoon powdered thyme
Prepare and disjoint duck, brown with onion and baste with fat. Add salt, pepper, water, and bay leaf. Cook 1 1/2 hours over low heat. Saute mushrooms, add flour and thyme. Add to duck and continue to cook 30 more minutes. Serve with wild rice.
Good-quality buttercup squash will be firm, heavy for its size and have an even cream color.
Avoid product that has soft spots, dull and wrinkled (...)
