Serves/Makes:4Ingredients 1/2 cup (125 ml) butter 1 cup (225 ml) chopped onion 4 cups (950 ml) fresh bread in bite size pieces 1 tsp (5 ml). salt 1 tsp (5 ml). basil 1/2 tsp (2 ml). pepper 2 14 oz (392 grm). cans diced or sliced tomatoes 4 tsp (20 ml). brown sugar
Preheat oven to 375 degrees (200 C.). In medium saucepan cook onion in butter till tender. Stir in salt, basil, pepper and bread pieces. Mix in tomatoes and sugar. Mix well, and put in a lightly greased 1-1/2 quarts (1425 ml) casserole. Bake 30 minutes or till hot and bubbly.
You should be able to find apricots in most major stores from January until early August.
California apricots are available from May through July (...)
