SALAD:2 bags spring lettuce mix2 Red Anjou Pears, diced, leave on peel1/2 cup Pecan or Walnut halves - candied2/3 cup Sugar1/4 cup Cranraisins1 cup Raspberry VinaigretteRASPBERRY VINAIGRETTE DRESSING:1/2 cup Olive Oil1/4 cup Raspberry vinegar2 tsp Sugar3-1/2 tsp Dijon Mustard1/4 tsp Salt
1. Heat sugar over med. heat until sugar starts to melt and stir in nuts. Stir until nuts are coated and put on parchment paper to cool. Break into bite size pieces. 2. Put salad greens in your serving bowl. Toss in pears and Cranraisins. Add the candied nuts. Wisk together all the dressing ingredients and pour over salad. Serve immediately.
Good-quality buttercup squash will be firm, heavy for its size and have an even cream color.
Avoid product that has soft spots, dull and wrinkled (...)
