PANCAKES:4 large eggs, room temperature3/4 cup all-purpose flour3/4 cup homogenized milk, room temperature1/2 tsp saltFILLING:2 Granny Smith apples, peeled and sliced1/4 cup white sugar2 tbsp brown sugar1 tsp cinnamon1 tsp lemon juicePans and preparation:2 pans, 9 inches round, 1 1/2 inches deep6 tablespoons butter
1. Preheat oven to 400F. Place baking pan in oven to warm it.2. Mix lemon juice with sliced apples. Add sugar and cinnamon to apples. Mix thoroughly; set aside.3. Place all pancake ingredients in blender. Beat until frothy. Let stand until pan is prepared.4. Mix lemon juice with sliced apples. Add sugar and cinnamon to apples. Mix thoroughly. Set aside.5. Thirty minutes before serving divide butter between 2 preheated pans. Melt in oven.6. Run blender mixture until frothy while butter is melting. Quickly place apples, half in each pan, pour half of the pancake mixture over each pan of apples.7. Bake for 25-30 minutes until puffed up like a popover or yorkshire pudding. Dust with powdered sugar and serve.
