24 Roma tomatoes
1 cup fresh basil, thinly sliced
1/2 cup Extra virgin olive oil
6 Garlic cloves; minced
1 tsp salt
1 tsp ground pepper
1/2 cup grated parmesan


Boil tomatoes for 1 minutes. Cool tomatoes immediately by placing in cold water then drain. Remove tomato skins and core. Next, halve the tomatoes and remove the seeds. Now dice tomatoes and put in nonmetal bowl. Stir in basil, olive oil, salt, garlic, pepper, and parmesan cheese. Cover and keep at room temperature for 2 or 3 hours.

Sauce may be served at room temperature, or heated until warm. Serve with your favorite pasta dish!
