4 to 6 medium Nectarines, peeled, pitted, thinly sliced1 can (12 oz) peach nectar1/2 cup water3 tbsp brandy or peach SchnappsZest of 1 orange1/2 vanilla bean, splitPinch Cinnamon
Combine sliced nectarines, peach nectar, water, brandy, orange zest, vanilla bean, and cinnamon in a medium saucepan; heat over medium heat to a simmer. Cover and reduce heat to low; continue to cook for 5 to 7 minutes, or until nectarines slices are tender.Transfer nectarines to serving dishes; discard pieces of vanilla. Serves 4 to 6.
Grapefruit keeps at room temperature for at least a week. For longer storage, refrigerate in a plastic bag or in the covered vegetable crisper.
