8 boneless, skinless chicken breasts, cooked and cut into bite size pieces2 cans cream of chicken soup1 large can evaporated milk1 (4 oz) can green chilies1 onion, chopped1 or 2 chopped jalapeno peppers1 package flour tortillas1 lb. package Cheddar cheese
1. Lightly grease a 9x13 inch casserole and line with tortillas.2. Mix cooked chicken, soup, milk, and cheddar cheese.3. In a seperate bowl, mix onions, chilies, and jalapeno peppers, and add to chicken mixture; mix well.4. Pour mixture over tortillas and bake at 400 deg. for 35-40 minutes. 5. Let set for 15-20 minutes before serving.
To crack coconuts, pierce one or two of the eyes and drain the milk.
Place in the freezer for an hour, or in a 350°F. oven for 20-30 minutes. (...)
