1/4 cup onions, minced1 cup NESTLE Cream1 tbsp. cooking oil1 tsp. salt2 tsps. ginger, grated1/4 tsp. cumin1/4 tsp. ground turmeric1/4 tsp. ground cinnamon1/2 kg. chicken fillet1-1/2 cups honeydew melon, cut into 1-1/2" chunks1-1/2 cups ripe mango, cut into 1-1/2" chunks1/2 cup pineapple chunks1 tbsp. lemon juice1/4 tsp. pepper
1. Combine the first 8 ingredients, add chicken to coat, marinate for at least 2 hours.2. Pan-fry chicken until lightly brown. Remove from pan and set aside.3. Stir in remaining marinade in the same pan for sauce. Heat through.4. Slice chicken into 5 pieces.5. Gently toss fruits with lime juice or pepper.6. To serve, arrange fruit mixture and chicken side by side on the plate.7. Pour sauce over chicken.
You should be able to find apricots in most major stores from January until early August.
California apricots are available from May through July (...)
