1 pound grated cassava. If using a whole cassava, just puree in a food processor3 whole eggs1 ¼ cups sugar1 tall can evaporated milk (about ¾ cup)1 tall can coconut milk (about 1 ½ cupS)For the Topping1 TALL CAN EVAPORATED MILK (ABOUT 1 ½ CUPS)1 tall can COCONUT MILK¾ CUP SUGAR2 TBSP FLOUR6 EGG YOLKS, SLIGHTLY BEATEN
Mix all the ingredients together. Blend well. Put in 9x13 pan. Bake at 350 degrees for 40-50 minutes or until done.For the topping:On a saucepan, mix all ingredients together. Make sure there are no lumps. Bring mixture to a boil, stirring constantly. When thick, spread on top of the cooked cassava and broil for 10 minutes or until you have a nice combination of black spots on a golden background.

Acorn squash is available year-round with a peak from October through December. Danish squash from Northern states is available May through October.
