2 c. whole sweet rice (glutinous rice)4 c. coconut milk1 c. sugar1 c. grated fresh coconut
1. Rinse rice and place in a 2-quart saucepan.2. Add coconut milk.3. Boil for 15 minutes and simmer until rice is cooked--about 15 minutes or more.4. Mold cooked rice in small cups and unmold each one on a sauce.5. Sprinkle sugar and grated coconut on top of each mold.
Used as you would cooked spinach, good-quality collards will have dark-green colored, broad, flat leaves that are crisp, upright and not wilted.
