8 cups diced zucchini 1 red bell pepper, chopped 1 cup cornflakes cereal 1 cup shredded Cheddar cheese 1/2 cup olive oil 1 teaspoon dried basil 2 eggs, beaten salt and pepper to taste
1)Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x13 inch baking dish. 2)In a large bowl, combine zucchini, bell pepper, cornflakes, cheese, oil, basil, and eggs. Season with salt and pepper to taste. Spread evenly into prepared baking dish. 3)Bake in the preheated oven for 45 minutes, or until top is golden brown.
Do not store potatoes in the refrigerator. Refrigeration converts the starch in potatoes to sugar which will cause the potato to darken when cooked.
