Scientific Binomial Name: Ipomoea batatas


Baked, boiled, mashed, steamed and candied


Also called, Batata, White Sweet Potato, Cuban Sweet Potato and Camote, good-quality Boniato will be firm and heavy for their size. Skin colors may include pink, purple, cream and red.


Avoid product that is soft, wrinkled or light for its size.


Keep boniato in a cool, dark place for a few days to a couple of weeks depending on freshness. Only store in the refrigerator if signs of decay have appeared and usage will be immediate.


In general, vegetables will not ripen further after harvest.
