Steamed, baked or used in stir fry.
Also called asparagus bean, asparagus pea, Chinese pea, snake bean, boonchi, dau gok, or yard long beans, good-quality Chinese Long Bean will be firm but pliable with no blemishes.
Chinese Long Beans can grow as long as three feet but are preferred when they are between 12 and 20 inches in length.
Long bean coloring will vary from light to dark green. The pale-green variety will be more meaty and sweet.
Avoid product that is soft, blemished or has soft or moldy spots.
Beans do not store well, so keep them refrigerated but place them in the warmest part of your refrigerator and keep them dry.
In general, vegetables will not ripen further after harvest.
The next time you make stir-fry, use jicama instead of water chestnuts. The texture and juiciness are similar, but the flavor of jicama is better. (...)
