Scientific Binomial Name: Momordica charantia
Use similar to squash - can be stuffed, curried or pickled.
Good-quality bitter melon should be firm, wrinkled and light-green but turning yellow in color and may turn orange when very ripe.
Avoid product that is soft, completely orange in color or has spots of mold.
Always store squash in your refrigerator, but only wash just prior to use.
In general, vegetables will not ripen further after harvest.
Bitter Melon is an excellent source of vitamin C and dietary fiber. It has very little sodium.
The skin is edible, but the seeds should be removed. Soak in salt water to remove any bitterness.
