Scientific Binomial Name: Apium graveolens
Eaten raw, cooked, soups, stews and salads. The stalks are often used to garnish tomato based drinks such as the Bloody Mary.
Also called apio or celeriac, good quality celery root will be very firm with light brown skin.
Avoid product that is even slightly soft or product that is very dark-colored.
Celery root can be stored in the refrigerator for a couple months if kept dry.
To prolong storage life, soak in warm water for 2-3 minutes before storing in your refrigerator.
In general, vegetables will not ripen further after harvest.
Celery Root is low in Saturated Fat, and very low in Cholesterol. It's also a good source of Dietary Fiber, Vitamin B6, Magnesium and Manganese, and a great source of Vitamin C, Vitamin K, Phosphorus and Potassium.
Good-quality zucchini should be firm, smooth-skinned and small in size. The surface will shiny and dark-green in color.
