Common Asian cooking ingredient. Use with other Oriental vegetables or serve raw as an entree.

Selection

Also called Choke-sun, Take-noko and chun-sun, Bamboo shoots are flat, opaque slices that come from the bamboo plant, which looks like asparagus.Normally sold canned, it can be found fresh and should be free of dark brown coloring or soft spots of decay.

Avoid

Avoid product with brown spots that are even slightly soft - an indication of being too old.

Storage

Store fresh bamboo in your refrigerator. Cut product should be kept in water.

Ripening

In general, vegetables will not ripen further after harvest.
