Aka Shiso is be the primary Shiso when making pickled plums, but it can be used in a variety of dishes from tempura to garnish, or from salads to brazing greens.
Aka Shiso is a fabulous juicing partner, both for its brilliant red color and fresh mint-like flavor.
Choose brilliant red leaves that are not turning green or becoming translucent. This herb should be fairly firm and should taste very minty.
