Aka Shiso is be the primary Shiso when making pickled plums, but it can be used in a variety of dishes from tempura to garnish, or from salads to brazing greens.
Aka Shiso is a fabulous juicing partner, both for its brilliant red color and fresh mint-like flavor.
Choose brilliant red leaves that are not turning green or becoming translucent. This herb should be fairly firm and should taste very minty.
Check in between leaves if they are bunched as this is the common place where you find decay if it exists.
