Usage: Used raw in salads, dips, sandwiches, sushi, and in oriental cooking
Selection: Good-quality Japanese cucumbers are similar to English cucumbers - they are firm, thin, long and an even dark-green color. However, the Japanese cucumber has prickly skin.
Storage: Unwashed cucumbers should be placed in a perforated plastic bag and stored in the refrigerator.
Avoid: Avoid cucumbers that are soft, yellow or wrinkled on the ends.
