Usage: Use in stir-fry or as a meat stuffing.

Selection: Also called Gobo root, good-quality burdock will be firm, heavy for its size and have brown-colored skin.

Avoid: Avoid product that is soft or pliable.

Burdock is available year-round from California, Hawaii, and Japan.
