Usage: Use as you would regular sweet potatoes.
Selection: Also called Batata, White Sweet Potato, Cuban Sweet Potato and Camote, good-quality boniato will be firm and heavy for its size. Skin colors may include pink, purple, cream and red. Keep boniato in a cool, dark place, but not in the refrigerator.
Avoid: Avoid product that is soft, wrinkled or light for its size.
