Aka Shiso, also called Perilla, is an especially sought-after herb traditionally used for making pickled plums. However, don't limit your use - try it also as a juicing or tempura ingredient, and garnish.
Selection Information
Usage: Aka Shiso is be the primary Shiso when making pickled plums, but it can be used in a variety of dishes from tempura to garnish, or from salads to brazing greens.
Selection & Storage: Choose brilliant red leaves that are not turning green or becoming translucent. This herb should be fairly firm and should taste very minty.
Avoid: Check in between leaves if they are bunched as this is the common place where you find decay if it exists.
