Asian Style Turkey Rolls

This low-fat recipe with wonderful hoisin-orange flavor is great as a meal or cut into rolled pieces & sealed with a toothpick as an hors d'oeuvre.
Prep time: Approximately 15 minutes
INGREDIENTS:
6-8 fat free or low fat flour tortillas (or you can use mandarin pancakes)
1 pound ground turkey breast
1 teaspoon of sesame oil
1 teaspoon peanut butter
2 tablespoons finely chopped ginger
2 cloves finely chopped fresh garlic
8 shiitake mushrooms with stems removed, finely chopped
10 scallions, chopped
1/4 cup hoisin sauce
1/4 cup orange juice
1-1/2 teaspoons reduced sodium soy sauce
6-8 lettuce leaves (1 per tortilla)
1 cup shredded carrots (about 2 carrots)
1 cup shredded cucumber (about 1 large cucumber)
1/2 teaspoon chili garlic paste (or more to taste)
fresh basil leaves (optional)
PREPARATION:
- Follow directions on tortilla package for heating.
- Heat a large non-stick skillet or wok over medium high heat. Add turkey and cook, stirring often until no longer pink. Usually takes about 5 minutes. Transfer to a plate and set aside.
- Add oil to the skillet or wok. Add ginger and garlic and stir until fragrant, about 20 seconds. Add shiitakes and scallions and stir until tender, about 2-3 minutes. Stir in hoisin sauce, orange juice, soy sauce, 1-1/2 tablespoons of water, peanut butter and the turkey you placed aside. Stir until heated through.
- To serve, place a lettuce leaf on a warm tortilla. Spoon on some of the turkey mixture - enough to cover the length of the tortilla. Top with carrots and cucumber and a fresh basil leaf. Roll tortilla and serve or let your family or company make their own. Turkey mixture can be made in advance and served and re-heated.
